Traceability

Today, more than ever before, sanitary emergencies like “mad cow disease”, “dioxin chicken”, “methanol in wine”, etc., pushed the public opinion to demand further safety guarantees on the origin and quality of the food that reach our tables. In the Food and Farming System, the “hygiene package” establishes the “precaution principle” and the FSO (Food Sector Operator) and guarantees the healthiness of the products put on the market.

Regulation CE n. 178/2002 defines traceability as “the ability to trace and follow a food, feed, food-producing animal or substance intended to be, or expected to be incorporated into a food or feed, through all stages of production, processing and distribution.”

The aim of traceability is to ensure that everything enters the food chain ( feed, live animals for human consumption, foodstuffs, ingredients, additives, etc.) leaves a mark of its history, following the path which goes from raw materials to the final consumer so that, in case of emergency, the FSO and the Control Authorities, can isolate the lot production “tracing” the different levels of production (flow of raw materials: the origin documentation and destination etc.) and are able to define the control measures for possible dangers.

The quality and safety guarantee of the marketed meat is one of the most essential need of Fratelli Siciliani, which during the time, with reference to each technological innovation, has implemented a traceability management system; it allows to track all the data which refers to a single piece of meat, in each step of the productive cycle until the marketing, in one piece or dissected.
